Sparks Family Christmas

We’d love to hear about some of your favourite Christmas traditions so please do tag us with #Sparkschristmas in your posts! For now, here’s how to make Nanna Sparks’ famous Moussaka.

Ingredients:

1 Onion 500g

Minced Lamb

1 Can of Tomatoes

1 Stock Cube

2 Courgettes

Potatoes

2 Eggs

25g Grated Cheddar Cheese

300g Greek Yoghurt

Method:

Dice the onion and fry until softened. Add the minced lamb and fry until browned.

Add the tomatoes and the stock cube. Stir together and simmer for 10 minutes and then transfer to an oven-proof dish.

Meanwhile, slice the potatoes then par boil and drain them.

Cut the courgettes into round slices, transfer to a microwave-safe dish and gently cook them in the microwave, a little at a time, until softened.

Layer the sliced courgettes and potatoes on top of the mince.

Whisk together the yoghurt and eggs and pour over the rest of the ingredients.

Lastly sprinkle the grated cheddar cheese on top.

Cook the Moussaka in the oven for 30-35 minutes at 200°C.
