Easter Bunny Gluten-Free Cupcakes

Easter weekend is only a few days away and with plans to indulge in all the treats and yummy Easter food, it is important for families with dietary requirements like ours, to consider gluten free and dairy free options. @mummasparks recently found out that she is gluten intolerant so finding an alternative baking recipe that still allows her to enjoy something special, without compromising on the taste has been really important. After some research, I found a good basic recipe for Gluten-Free Cupcakes, that can also be used for larger celebration cakes too.

Since finding the recipe for these cupcakes a few weeks ago, I have been practising it a few times to get the consistency and taste just right. Now I finally think I've gotten it down to its best and I'm really happy with the result.

The other great thing about making cupcakes is the decorating and it's a perfect activity to get little ones involved with too. When I made the video above, I gave myself enough time to make the cupcakes in advance and have them cooled down before I collected my granddaughter Tilly from preschool. That way, we could do the decorating together before the all-important taste test (or as Tilly puts it, the 'eaty-eaty' bit!).

To make your cupcakes you will need:

125g of gluten Free self-raising flour

150g of white sugar

40g of cocoa powder

2 eggs

100ml of milk

100ml of vegetable oil

Half a tablespoon of vanilla extract

60ml of boiling water

To decorate:

200g of icing sugar

100g of margarine

pink food colouring

marshmallows, edible glue, glitter sprinkles and liquorice
